Nel vino ogni bottiglia sembra voler raccontare la stessa vecchia storia. Noi abbiamo preferito caricare contro i mulini a vento. In wine, every bottle seems determined to tell the same old story. We decided to charge at windmills instead.

With humility and a certain madness, we go looking for the best grapes we can find, from whoever gives us the strongest guarantee of quality. It is an uncomfortable choice: we have no hillside name to put on the label, only the wine inside the bottle. We are fine with that.
Un debole ce l'abbiamo, ed è per le vigne vecchie: piante con più di cinquant'anni, radici profonde, meno uva e più concentrata. Producono poco e si lamentano molto. Come noi. We do have one weakness: old vines. Plants over fifty years old, deep roots, less fruit and more of it in every berry. They yield little and complain a lot. Like us.
Il vignaiolo è sposato con la sua terra: nel bene e nel male, ogni annata la sua parcella è quella. Noi no. A ogni vendemmia andiamo a cercare la vigna che quell'anno ha dato il meglio, e lì mettiamo le mani. Non è infedeltà: è il terroir inseguito, annata per annata. A grower is married to his land: for better or worse, every vintage his plot is the same plot. We are not. Every harvest we go looking for the vineyard that gave its best that year, and that is where we put our hands. It isn't infidelity: it is terroir pursued, vintage by vintage.
Per questo non vi portiamo in vigna. Non c'è una cantina da visitare né un vignaiolo da fotografare: la vigna giusta, l'anno prossimo, potrebbe essere un'altra. In cantina non serve un mago. Serve pazienza, e la gravità lavora gratis. A cellar doesn't need a magician. It needs patience, and gravity works for free.
Vinificazione a San Rocco Seno d'Elvio. I mosti scendono per gravità, le temperature sono quelle che ci sono, la fermentazione parte da sola con i lieviti che arrivano dall'uva. Nessun lievito selezionato, nessuna correzione, nessun trucco che serva a far somigliare un'annata a quella prima. Vinified at San Rocco Seno d'Elvio. The must moves by gravity, the temperature is whatever the cellar gives us, fermentation starts on its own with the yeasts that come in on the grapes. No selected yeasts, no corrections, no tricks to make one vintage resemble the last.
I vini non vengono filtrati né chiarificati. Un deposito sul fondo non è un difetto: è il vino che si è tenuto quello che aveva. The wines are neither filtered nor fined. Sediment at the bottom is not a flaw: it is the wine keeping what belonged to it.
Il Nebbiolo è il re delle uve piemontesi e lo sa benissimo. Noi lo trattiamo con rispetto, non con reverenza. Nebbiolo is the king of Piedmont's grapes and it knows it. We treat it with respect, not with reverence.
Note di degustazione non ne scriviamo. Preferiamo che sia il bicchiere a parlare. We don't write tasting notes. We'd rather let the glass do the talking.
Amaro a base vino, radice di genziana, amaro sul serio. Nasce dove finisce la cena e comincia la discussione. Il capitolo che non c'entra niente con gli altri — e infatti è quello che tutti ricordano. A wine-based amaro built on gentian root, and properly bitter. It belongs to the moment dinner ends and the argument begins. The chapter that fits none of the others — which is exactly why people remember it.
